This chilli chicken dish is quick and easy to make.
Chicken thighs are tastier in my opinion but take an extra 30 minutes to cook.
Chicken breast also works well.
Ingredients for 4
- 8 chicken thighs deboned or 4 diced chicken breasts
- 2 Large onions roughly chopped.
- 1 TSP Cumin Powder
- 1 Tsp Coriander powder
- 3 TSP Sweet Smoked paprika
- 1 TSP Chilli Powder or more or less to taste
- 1 TBSP Grated garlic
- 4 TBSP Double cream
- 3 TBSP Tomato puree
- 2 TBSP finely chopped coriander or Parsley leaf
- 200ml beer, white wine or chicken stock
- 1 tin kidney beans ( optional)
- 6 TBSP Olive oil
- Salt to taste
Method
Fry the onions in the oil until softened. Add the garlic and spices and then the chicken thighs.
If using chicken breast dice that and add it towards the end of cooking to poach through.
Add the rest of the ingredients and simmer the chicken thighs for30 minutes or chicken breasts for 20 minutes.
Serve with soured cream and grated cheese, boiled rice and garnish with coriander leaves or parsley.
