A chef from Wokingham has reached the final of a prestigious competition for young chefs.
Josh Wilde of Fare Eatery has reached the UK final of the S.Pellegrino Young Chef Academy competition, a global initiative that aimsto discover and support the most inspiring young chefs around the world.
The bi-annual competition and academy aims to push the boundaries of gastronomy and has the support of some of the most celebrated figures in the industry.
Being selected to compete at the UK final, taking place at Le Cordon Bleu in London on September 25, means Josh joins a shortlist of nine of the UK’s most promising chefs under 30.
Opening in June of this year, the news comes just three months after Josh opened at Fare Eatery in the Grade-2 listed Town Hall in the heart of Wokingham.
The 80-cover restaurant uses a robata grill to finish many of its dishes over hot coals. The modern fire-led menu features dishes such as rump of lamb, crispy shoulder, smoked aubergine and mint; cornish cod, brassicas and truffle sauce, and amaretto baba, spiced pear and vanilla cream.
Speaking about his nomination Josh said: “It’s such an accomplishment to be a regional finalist again in this year’s SPYCA competition.
“I’m using this second chance as a proper challenge to myself, to be better and cook better. I can’t wait”
The winner will go on to represent the United Kingdom at the global Grand Finale in Milan next year.
